Chocolate Pudding

Allergen info, No : Beef, egg, dairy, gluten, soy or nuts. 

Difficulty: Super easy

Servings: 5 4oz servings

Weight Watchers 360 points: 7

Ingredients:

2 VERY ripe avocados

2 Barely ripe bananas

6 Tablespoons unsweetened cocoa

1/4 cup powdered sugar ( optional)

1/4 mini chocolate  chips ( optional – lots of chocolate products have soy in them, so check carefully if this is an allergen issue for you)

Step 1: Have a kid.  Save baby food jars (4 oz size) . Or I suppose you could use something else to store the pudding in, but baby food jars are perfect.

Step 2:  Scoop out avocado and peel bananas. Put in food processor with cocoa and powdered sugar and blend until smooth and pudding like.

Step 3: Scoop out into a bowl and stir in chocolate chips.

Step 4: Put in baby food jars and stick in the fridge.

Notes:

The Avocados need to be really ripe to get nice and creamy.

If you like chocolate banana flavored things, ripe /overripe bananas work too.  We prefer bananas that are just turned yellow with no brown spots- you know, the kind with almost no flavor.

You could use alternative sweeteners just fine in this recipe. Stevia, honey, molasses, raw sugar etc.  It will just change the flavor profile a little. Powdered sugar blends nicely without any crunch lumps.  Riper bananas are sweeter and not as much sugar is needed.  I liked it just fine with no sugar, but then I like super dark chocolate.
